Oven Roasted Olives with Feta and Rosemary
Simple in their presentation, but elegant in presentation, Kay Pratt’s
Roasted Olives have proven a constant favorite for diners at Silver K Café in
Johnson City.
Ingredients
2 cups crumbled feta
12 pitted Kalamata olives
1 4-inch sprig Rosemary
3/4 to 1 cup extra virgin olive oil
Put feta cheese into a flat, oven safe bowl in an even layer. Sprinkle
olives evenly over cheese. Lay rosemary across cheese and olives. Drizzle oil
over the entire dish. Roast at 400 degrees for 15 minutes or until olive oil is
bubbling. Remove from oven and serve hot with baguette slices.
Serves 6-8 as an appetizer.
