Moscato Pudding

 

1/3 cup heavy cream

6 T raw sugar

2 whole eggs + 2 yolks, divided

1 t potato starch

1 t vanilla extract

6 T Moscato

 

Using a hand mixer, whip the heavy cream in a chilled bowl until stiff peaks form, and set aside. In a double boiler, combine the sugar with the 4 egg yolks and whisk till creamy. Add the potato starch, vanilla, and Moscato and cook, stirring, until thick. Set aside to cool. In a bowl, beat 2 egg whites with a hand mixer until stiff peaks form and fold into the Moscato mixture along with the whipped cream. Serve with fruit.
